Soy Irene Flores Hermosa, una apasionada por la gastronomía, el aprendizaje constante y la aventura. Desde muy joven supe que mi vida estaría ligada al arte de cocinar, crear y conectar con las personas a través de los sabores. Mi trayectoria profesional me ha llevado a trabajar junto a grandes talentos del mundo culinario, a si como Ferrán Adrià o los Hermanos Roca, perfeccionando mi enfoque en la innovación y el detalle.
También me encanta explorar nuestas culturas y gastronomias, lo que me llevó a explora todo Asia durante un año, visitando tribus y enfrentandome a los retos que esto suponia.
Actualmente, fundé R&D Gastrònomic, un lab dedicado a las texturas e ingredientes, y ahora debido a la alta demanda que nos piden de formación, hemos abierto Taller Gastrònomic, donde la excelencia y la creatividad son el corazón de todo lo que hacemos. Como líder del bloque de I+D, busco inspirar a mi equipo a ir más allá de los límites establecidos, explorando nuevas ideas y creando experiencias gastronómicas únicas que dejen una huella imborrable en quienes las disfrutan.
A lo largo de mi carrera, he tenido la suerte de trabajar en proyectos fascinantes y exigentes, y de aprender de los mejores en el sector. Sin embargo, siempre mantengo la humildad de saber que cada día trae una nueva oportunidad de crecer y desafiarme a mí misma.
Pero no todo es trabajo. Si hay algo que define mi esencia, es mi sueño de recorrer el mundo y probar toda su gastronomía. Creo firmemente que cada plato cuenta una historia y refleja la cultura y las emociones de quienes lo crean. Para mí, descubrir esos matices es una de las mayores fuentes de inspiración.
Además, tengo un credo personal que me impulsa cada día: «El no ya lo tengo, no pierdo nada por buscar el sí.» Este pensamiento, junto con mi otra máxima «The life belongs to those who dare», son los pilares que me empujan a tomar riesgos, explorar nuevas fronteras y luchar por lo que creo.
En un mundo lleno de desafíos, también pienso constantemente en cómo podemos marcar una diferencia real. Si pudiera cambiar algo, sería garantizar un alimento universal, accesible para todos, porque nadie debería pasar hambre.
Finalmente, si me preguntas por mi alimento favorito, la respuesta es simple: la tortilla de patatas de mi abuela. No hay estrella Michelin que supere el sabor de sus manos, que me transporta directamente a mi infancia con cada bocado.
